Black Dynasty House Shoyu: This sauce began as an experiment in diverting food waste from the hand made noodle program at Black Dynasty. We toasted the noodle scraps, combined them with black eyed peas, the traditional Japanese Shoyu variety of koji kin, filtered water, and salt, and this delicious, one of a kind shoyu was born.

Mushroom Umami Sauce: We dreamed of finding homes for all the ugly, broken, or sad looking mushrooms that could end up in the compost pile, or worse, the trashcan. We are unapologetic about our stance on food waste. So with some testing, utilizing the transformative power of koji and its enzymes, we created our signature mushroom umami sauce, truly turning trash into treasure.
